Ingredients:

  • 100 g Unsalted Butter (3.5 oz)

  • 1 tsp Fresh Garlic, crushed

  • 3 tbsp Flour

  • 1/2 tsp Nutmeg

  • 1/2 tsp Ground Coriander

  • 1/2 tsp Black Pepper, freshly milled

  • 1 cup Chicken Stock

  • 3 cups Milk (increase for a thinner soup)

  • 1/2 cup Fresh Cream (double cream)

  • 1/3 cup Blue Cheese, crumbled

  • 1/2 cup Cheddar Cheese, finely grated

  • 100 g Biltong (Beef Jerky, 3.5 oz), finely grated or powdered

  • 2 tsp Sherry

  • Thin Biltong Slices to garnish (optional)



Instructions:


  1. Melt the Butter over medium heat in a medium saucepan.

  2. Saute the Garlic in the Butter for 1 minute. Sprinkle over the Flour, Nutmeg, Coriander, and Black Pepper. Stir to form a paste.

  3. Add the Stock, stirring continuously to prevent lumps. Add the Milk and Fresh Cream, bring to a boil, and then turn the heat to low.

  4. Stir in the Blue Cheese and the Cheddar, stirring until melted. Remove from heat.

  5. Add the Biltong and stir. Just before serving, stir in the Sherry.

  6. Garnish with Biltong Slices and serve.

Recipe Notes: The soup will thicken on standing. This Biltong Soup is not only a South African classic but also incredibly easy to make.
